Organic Lime Pudding Cake

Organic Lime Pudding Cake

This cake-like pudding tastes like warm Key lime pie. Tried and tested at the Manson Household. It was so worth all the steps and was actually quite easy to make. Okay truth be told it was amazing and I ate most of it myself. The top is delightful and cakey but the bottom is  creamy soft pudding, it is tangy, sweet and delectable.

Prep: 20 min - Bake: 42 min - Cool: 30 min
Cake Ingredients:
3 eggs, separated
1 cup sugar
1/3 cup Butter, softened
1/4 cup lime juice
1 tablespoon freshly grated lime peel

Organic baby food roasted banana puree

Baby food-Roasted Organic Banana Puree

Vegan * Vegetarian * Gluten Free

Guest Contributor Kim Corrigan-Oliver

Organic Bananas are a great first food for your baby. They are easy to digest and sweet like breast milk. They are often referred to as a pre-packaged meal for your baby…just bring it along as is, mash when needed and serve.

I like to take things to a different level though. I like to really tickle those tiny taste buds, and why not, the tastes are children develop in childhood will be with them for a lifetime. Now is the perfect time to introduce flavourful foods.

So, why not roast your bananas before serving to your baby. The roasting process takes the flavour to a whole new level, one your baby is sure to love.

Twice baked Squash-local in season organic cooking

Twice Baked Squash-Local in Season Organic Cooking

Vegan * Vegetarian * Paleo * Kid friendly * Recipe

Eating in season is by far the best way to eat. Food in season is at its prime in taste and nutritional value. And eating in season much easier on our wallets and that is always a good thing.

At the moment, the growing season in Ontario is coming to a close, but I for one still have a few butternut squashes hanging around from the garden, just waiting to be cooked. We enjoy butternut squash many different ways – roasted on its own or with other vegetables, in soup and in twice baked squash, one of my little man’s favourites.

Ontario Organic farms and farmers

Organic Ontario Farms and farmers- Some of the farms we support

Ever wonder where your organic produce really comes from and the people that grew it. Organic farming is very labour intensive, it is a true labour of love. Here is a list of some of the wonderful farmers/farms that we use. Most people think of our local organic produce season from June– October but for some items it is year round. There are lots of stored crops, greenhouse and otherwise dried, canned and packaged for year round eating. This allows us to eat delightfully local all year. Like a farmers market right to your door.

Can't find that in your grocery store.

Another great resource Seasonal Eating Ontario-What is in Season right now?

Organic baby food making

Organic Baby food Making-Feeding Your Baby

There is a wonderful thing happening in the world of parents today, they are questioning the norm when it comes to feeding their babies, and I for one couldn’t be happier about it.

Feeding our babies should not be complicated. It should not be a struggle. It should not be filled with processed, manmade foods. There should be no food dyes, no preservatives, no chemicals or scientific ingredients; instead there should be food, real food as Mother Nature provides for us.

Real food – fruits, vegetables, lentils, beans, nuts, seeds and grains should be the foods we turn to to feed our babies. And when we are first starting solids fruits and vegetables are all your baby needs. These are the perfect foods for our little babes as they begin the adventure of eating.

Organic chopped salad recipe
Chopped salads are my go to weekday salad. It changes over the season as there are different things in season locally and either feast or famine in my fridge. What I love is that in each and every bite is different and no two salads are identical.

The trick is to start with a really great recipe and then alter from there, that way you can whip it up on a moment’s notice while you are making the other things for your meals. It is made all on one chopping board and the dressing is chopped and mixed right into the whole thing.

Here is my Chopped Salad

Serves 4

5 minutes

4 green onions (alt red onion, leeks etc)
½ a cucumber
Some fresh basil leaves (dill is great too)
2 small, just ripe avocados
1 lettuce (leaf, Boston or romaine or even mixture)
1 Tomato

6 tbsp. Extra virgin oil
2 tbsp. Red wine vinegar
1 tsp. English Mustard ( I add more than this to my salads)
Sea salt and freshly ground black pepper

Optional things I have put in

Cheddar cheese, grilled chicken, feta or blue cheese, zucchini, olives, peppers, apples really anything that

You will need

Chopping Board and a large knife

Start with the crunchy vegetables first. Starts chopping everything into smaller sized slices continually move everything into the center of your board so that you are always chopping into the ingredients below. Avocado if it is still firmer you will need to cut up small, if it is quite soft I just cut in half, take out the pit and scrape with a spoon until mush (no need for extra bowls)

I throw into a serving bowl and drizzle my olive oil, vinegar, salt pepper and mix thoroughly. Yum, I lived off this for two months when I did a raw vegan cleanse, still my favourite today. Enjoy!
